Today I spent the afternoon in the kitchen with my love baking pumpkin pie to kick off the best month of the year! 

In case you haven't noticed, I'm all about easy recipes, so this one is perfect for me. It doesn't take long, it uses very little ingredients, the directions are so simple, and it tastes so. darn. good.

A couple things you'll need if you're thinking about making some pumpkin pie yourself:

  • 1 box of pie crust (unless you're fancy and can make your own)
  • 2 eggs
  • 3/4 cup sugar
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 can (15oz) pumpkin
  • 1 can (12oz) sweetened condensed milk
  • pie pan
  • rolling pin
  • whipped topping (optional)

Preheat your oven to 425 degrees. Place pie crust on cutting board and roll until it fits in pie pan, I usually just keep rolling it and placing it until it fits, it's a guessing game for me. Most pre-made pie crusts are sized pretty close if not perfectly to a 9-inch pan. Once sized correctly place crust in pie pan. 

In large bowl, beat eggs with wire whisk. Stir in pumpkin pie spice, salt, pumpkin, sugar, and sweetened condensed milk until well blended. Pour into crust-lined pie pan.

Bake for 15 minutes then reduce oven heat to 350 and bake for 40-50 minutes or until knife inserted through the center comes out clean. Cool in refrigerator for 2 hours. 

Cut, place a little whipped topping garnished with pumpkin pie spice on top (if you'd like), serve and enjoy.

See? Super simple and it made my house smell ahhmazing. The perfect way to kick off October! Oh yeah and my dogs think they were helping too ;)
