chicken wild rice soup
With the colder weather coming up soon here (can't wait), soup is about to become a necessity once again. There is nothing better than a bowl of chicken wild rice soup on a cool fall day.
This recipe is my own, I've googled many chicken wild rice soup recipes and haven't really found one that I love. Either they weren't thick enough, they called for mushrooms (puke), or they just didn't hit the spot.
So I took a little from this recipe and a little from that recipe added some things I thought sounded good into it and boom: a recipe I love. And icing on the cake, Dylan is obsessed with this recipe too, it's a constant request in our house.
Please note: the recipe I'm giving you is for a single batch, the batch I made today was a double.
What you'll need:
4tbs of butter
1 cup carrots
1 cup celery
1 medium chopped onion
2 cloves of garlic, minced
1 1/2 tsps finely chopped thyme
1/4 cup all purpose flour
1 cup wild rice
32oz chicken broth
2 cups chicken, diced
1 cup heavy cream
1 box Rice a Roni long grain and wild rice
Salt
Pepper
In a large pot over medium heat melt butter.
Add celery, carrots, onion, garlic, thyme, and a generous pinch of salt and pepper. Cook over medium heat until vegetables start to soften, about 10 minutes.
Sprinkle flower over vegetables and cook until evenly coated and lightly browned, about 3 minutes.
Add the wild rice, Rice a Roni, and seasoning from Rice a Roni to the pot and gradually stir in the chicken broth. Bring to a boil, simmer over moderately low heat until vegetables are tender, about 30 minutes, stirring often. If soup looks too thick for your liking add more broth.
While soup is simmering, season your chicken breasts with pepper and cook in a large pan over medium heat until no longer pink throughout the chicken breast. Let chicken cool and dice. Add the chicken to the soup and simmer until wild rice is tender, about 10-15 minutes.
Stir in cream and serve.
